Yes, most non-undead do indeed get "old" and die, it's just that to the end of their lives they don't actually "look" old (and the same goes for incubi). Think of it like the Dungeons and Dragons dragons, who just get stronger and bigger as they age until they reach the end of their lifespan and simply pass away.
