They are still very challenging games, infinite continues just turn them from a 50h+ grind until you are good enough to clear with limited continues into a 2-4h per game stream
They are just plain really fucking fun to play and have many paths with different stages and bosses so replaying them and seeing how much better you are the 2nd time through is great content too

Using a lot of continues (ie quarters/tokens if this was a real arcade) has a lot of potential for fun bantering too, If I remember right Koro-san spent almost a hundred quarters for her first blind playthrough of Metal Slug X on stream which was pretty funny
