The first movie adds an extra fight scene but it's pretty similar otherwise. 2,3,4 are basically the same. 5 is directed pretty weirdly so that makes it different from the novel but it's a faithful adaptation. 6 is completely fucking butchered and godawful. The book is way, way better. 7 is pretty much the same although the movie adds the hilarious "10x stronger than marijuana" (or whatever it was) line. Future gospel is pretty much the same as well.

tl;dr: They're all faithful adaptions except for 6 (which is shit). Still, I recommend reading the novels as well assuming you can. They're great.

I don't understand why the fuck Type-Moon treats their most successful VN of all time so awfully. You can buy physical editions of Rewrite, Dies Irae, Muv-Luv, etc. right now brand new no problem but not fucking Fate/Stay Night. Oh well at least they still keep Mahoyo in print.
