She always warns potential sponsors, and other companies she collabs with like a talk show or anything, about things. For example, as she is working with Sega now, warned them. However, even when the companies give it the green light, sometimes the bugs start chirping after-the-fact, and companies being companies, in at least one case a company backed out of things after the fact, and made up some bullshit PR to pretend they didn't know anything, yadda yadda. It's pathetic but it is common. The place I work is in a completely different industry but I've seen the leadership here do the same thing just to get out of perceived heat (not involving China, even stupid minor stuff).

TL;DR:
1: Don't assume "companies" means vtuber companies.

You are not wrong, but that does not mean this was Coco's exact situation. You need a guarantor (a more accurate term than "sponsor"), but a company's involvement does not automatically mean that they are the guarantor if you have someone else who can be a guarantor (i.e. her father). In that case, your employer's involvement is not them guaranteeing anything, nor "sponsoring". The apartment will want a fancy letter that says "Hey this is so-and-so, she is an employee of ours who is a good person, and we care a lot about. Please take care of her as well while she lives in your building!", some notes about your income, maybe contract term, and so forth. The landlord might also complain to your company if you cause trouble, as an informal way to put pressure on you to not be a dipshit asshole.
Some luxury apartment companies in the US do this, but it is far more widespread at more tiers of living in Japan.

So Cover did not pay for her apartment, and they would never need to. What they needed to do was write a letter, which is very standard, and tried to make it look like Coco was a normal employee at a boring company. It does not legally obligate Cover to pay for the apartment.

In case you didn't know, both Hololive and Nijisanji use proprietary tech for their models, locked to company iphones, so it's pretty much impossible to 'steal' a company model and keep using it without permission. The talents literally don't have direct access to their models. That's why the recent ability to staple pngs onto their live2ds was such a big deal.
