She doesn't, exactly. She calls herself ぺこーら because she thinks it's cuter or whatever, but it's not like she reads ぺこら that way naturally. She's changing her name, not pronouncing it differently.
I kind of get it, though, to my ears at least the right name sounds more imposing, while the prolonged "o" sounds a bit more gentle, which fits her desire to make her stream family/kids friendly.
