Most people who fight him seriously can probably clear it under 100 deaths, he's definitely the hardest boss in the game. Kanata is not good at games.
She needs to play games with gradually increasing difficulties and learning curves to actually improve her gaming sense.
Her usual means of beating things is keep grinding until you win and memorize by brute force (and this legitimately works fine in a lot of games), but even when she's fully alert she picks many things up quite slowly or is held back by her physical ability not producing the result she is hoping to achieve. She's the kind of player that benefits enormously by viewing how to do something and she should just be watching Fubuki or Marine's run of it to see how to move (especially after she's tried it so much on her own).

Like she got the first two down to perfection and then a few more just completely undermine that effort.

I know that feeling all too well, you KNOW you can do it but it's just not there and if only you had one more try. Kanata's gorilla's endurance unironically works against her in this case because physically she can push herself but mentally she is only getting worse.
