Raids and better moderation tools, as well as better tools for a viewer to interact with chat via predictions, polls, channel point rewards, etc. On the creator end and the fan end it's pretty much superior to youtube from a tech standpoint. On top of that, raiding culture on twitch is INCREDIBLY useful for growth. If you stream for long enough, you WILL get people raiding, and if you're entertaining, you WILL keep them. This is the secret to Sayu's ccv. People often don't join her immediately, but because she's a good streamer who streams for half a day, people tend to drift to her eventually and she snowballs.

chatting is way better in every way, plus it doesn't have the same nebulous shadow banning that google uses. It's just better for having conversations between streamer and chat and doing things like points redeems. On the streamer's end, I guess you don't have to make thumbnails lol.
