There are some things that can't be done as a virtual character. Or if it can be done, it's extremely difficult or prohibitively expensive to do so.

As an example, Lord Aethelstan spent years of his life working as a personal trainer. So when he had the idea to do a stream teaching some basic home stretches and simple workouts, he had the opportunity to use his 3D avatar with a Mocopi sponsor.
But if you've ever seen Mocopi in action, his decision to use both his avatar and his webcam becomes extremely obvious.
And then for a recent stream where he showed off new, more advanced workouts with some cheap equipment, he ditched the avatar outright and just focused on giving a good lesson.
There's also OniGiri, who does cooking content. And even at her most virtual, she still needs her IRL hands visible (with gloves).
To say nothing of travel/outdoors content.

Some people want the expressiveness and creativity of vtubing while also having passions for content that vtubing is not conducive to.

Anti-schizos, fan-schizos, etc led to a big barrier being put up at first. It's loosening a bit nowadays, even on JP side. For me, I didn't mind Onigiri when it was just the hands and the green screen, I thought it was really clever actually. Never really cared for her model, so I didn't watch much.
I thought kiara's approach to outdoors in that one video she did was a clever approach, and i'm sure it will get more creative over time as more people try. I think some anons saw the wave of twitch streamers that bandwagoned into getting a vtuber model and then stopped using them after 6 months, and just calcified their opinion at that point.
I guess it really depends on what you're into vtubers for. For GFEbros I can see why they would want minimal to no flesh.

er, to clarify I think that's the core issue. Is the character the chuuba, or the naka no hito? For a lot of the most frequently trotted out examples of "flesh heresy", I think the character is the streamer themselves and they're just wearing a model sometimes.
For more "pure" virtuachuubas, that line is much more murky. They're putting on a character, and affectations, etc. Depends on the chuuba of course, but I think that is where the gap is
