DS1 is a lot easier. While ER has good SL1 weapons like the Serpent Slayer Blade, in DS1 pyromancies have zero stat requirements so you can use the end game ones with out any problems.

It's good for what it is and it's time, but going back to it after From's later games it really shows its age. Overall it has some of the weakest bosses in the series, with most of them just being gimmick fights. The level design also isn't as great as later entries. It's not a bad game but if I had to chose between playing it or a different Souls game I would chose the latter.

Release order is a pretty good way to scale their difficulty. The games have compounded for the most part. Each gets more stuff and gets faster.

The games become more complex and faster with each entry so release order is probably the easiest way to gauge difficulty. The only thing to keep in mind is that DS2 was directed by a different guy than the other games so it's difficulty is based more around gank fights and enemy spam compared to difficult encounters.

LoP and RE2 are more gameplay-focused than Minecraft, which ends up being more zatsu-y than anything else. LoP and RE2 are pretty different and LoP is more on the vein of Sekiro than RE2. RE2 is shorter, though.

RE2 is pretty short and should be easy to get through quickly. The other two are also great. I'd say RE2 > Minecraft (Solo Streams) > LoP > Minecraft Collabs. Also in regards to Elden Ring, she's planning on replaying it at the start of June so I'd recommend watching it by April at the latest.

I didn't add Armored Core to the list because I cannot get into mecha games. I like giant robots, but there's something about seeing them fight that utterly bores me. I'm sure it's a good game but I don't think I have the capacity to play a mech game let alone watch someone play it.

If it helps at all, Biboo drops ranged combat entirely almost as soon as possible, so her run has a pretty different energy compared to other, saner AC/mechgame streamers. No big blocky turtlebots camping the other side of the screen slowly chipping the other robot out with missiles and bullets, she's constantly screaming like some GAR super robot protag chasing the enemy down with a glass cannon "they die instantly or I die instantly" build and a laser sword and pile bunker.
Can't be helped if it's /m/ in general that's not to your taste though.
