What kept her hooked on GTA was the relatable contemporary setting and the wacky character comedy that gave her something to banter with.
RDR's cowboy western setting will be much less relatable to her and its focus on, as you say, "immersive realism" (i.e. big stretches of empty nature, no wacky comedy around every corner) and more "grounded" characters will be more challenging to engage with, so I'm not really expecting her to stick around to finishing it after one, maybe two, streams at most.

It's not that complicated. She liked the GTA games she played, so it's natural she's interested in other Rockstar games - and RDR was just the nearest low-hanging fruit, being that it is both relatively recent and fairly high-praised. The older Rockstar games (even older GTA's) have their issues, even though for example what she liked about GTAV will be much closer to GTA SA or VC or even Bully, but people told her the UX gets worse the older the games are, so she's sticking to the only other modern Rockstar game.

Even though she'd probably be better served to try out other GTA-likes that are not from Rockstar instead, but have more of the kind of content that she liked from GTA in them than RDR, like say Sleeping Dogs, Watchdogs or Saints Row etc.

No, the twitch thing is mostly because she's still looking for ways to grow further (to get more numbers and therefore more company support for her goals like 3D sololives etc.) and believes that there's a sizeable new undiscovered audience on twitch that would become her fans if she just catered to them.
