If you just want to watch vtubers just play a lot of vn and watch a lot of anime both with English subtitles of course.
Your monkey brain will automatically learn the language as you hear the Japanese voice and read the English subtitles at the same time.

I'm trying but it's hard. I'm at the point where I can read vinnies or basic stuff in general without looking up for kanji or vocab every minute. But I'm totally lost when it comes up to actually speaking or listening. I grasp most of the stuff in vidja streams but with zatsus my brain completly gives up. Try the japanesepod101 1 hour kana videos, those were the key for me. Study basic grammar at least enough to know how a sentence flows and then you're set to learn by listening. Listening to music helps a lot too

Kanji is just an easier shortcut to context. You're still converting written words into their meaning if you read them in kana, without kanji you're doing one extra step in your brain.
