The problem for me is that it is difficult to actually know the gender of your viewers. A large number of women will not use a feminine sounding name on twitch for example. And honestly if you run into a very female sounding name watching vtubers it's probably as likely to be a tranny than anything else. And unfortunately twitch gives you no tools for looking at the demographics of your viewers.

I really like just chatting streams.
In my opinion many vtubers fall short when they split their attention on making a podcast while talking to chat, and playing a game at the same time.
There are a few who can pull off doing just chatting, gaming, and talking to chat at the same time don't get me wrong.
For example the vtuber Kitanya_is_here does a excellent job of talking to chat who she calls max, while gaming, and providing excellent commentary all at the same time, but just because kitanya can pull it off doesn't mean you should have to.
Stick to your strengths is my advice.
I watch a vtuber (who I will not name) who does gaming collabs, and I got to say it's hard to follow as a viewer, and sometimes I think I only stick around as a viewer because of sunken cost falacy from having viewed her since before she was affiliate on twitch.
The problem with gaming collabs is a vtuber could be on a roll deep diving into a topic when their gaming collab mate gets a attitude with them about the game which diverts their attention from the topic they were discussing, and often leads that topic in the dust forever.
When vtubers aren't being bossed around in multiplayer games they often have a more linear easy to follow flow of speech.
When a vtuber isn't distracted by a game I would say their flow of speech is even more pristine, clarified, and easy to digest as a viewer trying to follow your content.

I think you need to get away from seeing this as something binary. Your personality and way of talking encompass certain mannerisms. The model can help support those traits, but the model doesn't necessarily dictate it. What I've noticed though and I have heard that sentiment from others before is that the vtuber is more likely to grow into the character and slightly adjust their personality to what they see on their screen. I have done this more than I'd like to admit, but it's still just me.

Honestly, the most important part is that you feel comfortable being yourself and comfortable expressing yourself through your model. If you fulfill that, it's going to feel natural to the viewer too. I like playing my model even if it's technically a mismatch and I think even if looks like it should never work, I will have a hard time getting away from it all the same. I know that in a design stage this might be hard to figure out, but honestly just think about the character you want to play, everything else will fall into place.
