I don't think it's exactly a flimsy reason, I'd imagine she just takes breaks from social media and work every now and then, her saying she was watching anime or reading manga wouldn't be completely wrong. The only thing I'd wish for is she gives a heads up first, but besides that a mental health break for a couple days isn't that unbelievable, other members take way longer breaks without saying anything so her taking a day or two off doesn't seem that bad to me.

Yeah you're right about that, I'd guess the only reason she says that is to try and "calm" the worries of some of her fans that might think she's ghosting them or doesn't care, though I don't think any sukonbu would think that. I'm not gonna deny she plays a character as a large part of her is still the character fubuki with how much she plays into being a fox as well as default persona things like age and how she met hololive members. But when it comes to streaming she seems to genuinely have interest in what she talks about and what she plays most of the time. Like with every member, she has parts of being a character but a lot of her irl self is still apart of her persona, I feel like the only reason people say she sticks to her character is because of how she's presented on the main channel and her professional demeanor. When it comes to her streams she's far sillier than other people think and usually doesn't seem to stick to a character and just enjoys whatever she's doing. I don't agree that that's part of her act, I think the first anon is correct and it was just meant to be a reassurance that nothing happened and she is completely fine because she is aware that the Sukonbu had worried after she was absent without announcement for several days. In her mind it was probably better to make up an odd reason than to stay silent, that would only make people worry more.
As for the other debate, I think of Shirakami Fubuki as a vessel for her to express her actual interests and passions for the most part, I think these are all genuine and there's not much of a reason for her to make that stuff up. Her personality itself seems mostly true to herself for the most part, except she clearly puts some sort of restrains and limits on herself for image reasons and acts within the framework of her established character, which is basically only that she's a fox and in her early twenties (which basically only ever comes up when she makes up a reason for why her childhood games/anime are all suspiciously old for someone of her age). It's not that hard to stick to your lore if you don't have all that much to begin with Also, as >>53851733 alluded to, she basically has two different modes (which she even acknowledges herself), she acts very different in her business mode when compared to her usual laid-back mode, so a lot of people that don't watch her outside of the main channel don't really get what she is like. Also, when I started watching her she very rarely talked about real life stuff but I feel she has opened up a lot more in that regard over the years. I think after doing this stuff for five years it's getting harder and harder to keep it entirely separate.

Thinking about it a bit more, remember when she just casually mentioned a while ago that she fell and injured her leg on the way home from the 2021 Holo Pokemon tournament? She had her leg in a cast and could barely move for a month and kept quiet about it and streamed like nothing happened at all to have us not worry and to distract herself from the pain.
I think she's just not very good at communication regarding this kind of stuff. I think it's the same thing here. Saying that she needs a break once in a while could lead people to think she's tired of this or not happy anymore or something. Even though it's perfectly normal to need a break once in a while, when you're in the spotlight like her, people might misconstrue it and use it against her.
She always kind of seems like she's afraid of alienating some of us, so she often tries to put a paper thin layer of plausible deniability between stuff at first to keep Shirakami Fubuki safe (e.g. the hand opening the card packs was my manager, not me; the one that's calling you virgins was my roommate Kuro-chan, not me) or second guesses herself (all the polls regarding if people want Kuro or not). That might be one the reasons why she'd rather apologize afterwards than make people worry by announcing she needs a break.

How fast can you read japanese? I don't know to what extent should I feel retarded.
When I was learning English I could still read fast since I use the same characters as my native language, so it was mainly a matter of meaning. But because Japanese is radically different, I juggle between the reading of characters and what they mean and I'm like a whole minute for a single phrase

That's normal. How long have you been at it? If you want to read fast, first, you need to know a lot of Kanji and second, you have to do a lot of reading. It's natural that you are slow if it's not your main focus. Learners like us that spend a lot of time watching streams will naturally be pretty good at listening comprehension but weaker at reading because we spend less time doing it. If the only time you ever engage with Kanji is during your Anki reps, you will spend a lot of time per sentence at first. Video content with Japanese subtitles (anime, dramas, clips) or voiced games (preferably those like VNs or some RPGs that don't advance dialogue until you press a button) are good tools to bridge the gap because you get both forms of input, but I think if you want to become a super fast reader, you'll need to check out some LNs or books. I barely do any pure reading (other than like Twitter) but through playing games in Japanese I have gotten okay at reading, even if I'm not the fastest either. But I do notice I need to practice reading more books too, because while I am decent at understanding written dialogue through my exposure, narration and descriptive writings are much harder to understand because it uses a different set of words you don't commonly encounter in spoken form.

Yeah then it's no big surprise you're still slow, you have barely even started, just give it some time and keep practicing. I don't think I even started mining stuff and actually consuming media until like 6 months in (though I should have probably started earlier). I never really bothered much with Manga (even to this day) because looking up stuff/creating cards out if it is a hassle so I don't really have much advice to give in that regard, but I think at your current level you just need to accept that it will a long time. When I started watching subtitled anime, I had to pause almost every sentence and had to listen to a lot of them multiple times until I got a vague idea of what was being said, I think it easily took me 45 minutes to an hour an episode. You just need to accept a certain degree of ambiguity at the earlier stages, which is why it might be preferable to watch/read something that you have already watched/read in the past so you have a vague idea what is happening even if you don't understand all the sentences exactly. Over time you will get a bigger vocabulary, better understanding of grammar and more experience through practice, so you will get faster and more confident. It's a gradual thing so you might not even notice at first but you will make rapid progress if you keep at it during this stage, in a couple of months you will already be much faster than you are now. Try to revisit whatever you are reading now at a later stage and you will see your progress. You just need to struggle a bit and push through right now. It helps if you read/watch stuff you actually care about so it's still enjoyable even if you struggle.

At least you're trying. I didn't bother with any real amount of reading until almost a year in, though made a mining deck after ~6 months and added to it with random things as I came across them.
I can read at a half decent pace these days, but I am over 3 years in at this point and have a couple hundred hours of reading minimum. Really should be a lot more but I try to do too many things.
I'd say you'll notice it being much easier after a month or two if you read 30 minutes to an hour a day. I struggled with the Dragon Quest games early on, putting 3 on hold around half way through. When I came back to it 5-6 months later I noticed I could read a lot more easily. I wasn't even doing much reading in that gap, life just got busy and I stuck with my minimum reps.
I will say though that I did try reading an LN 9-12 months ago and it destroyed me. I think it wasn't as beginner level as I was expecting though.

Playing/consuming jp media every day (ideally) with the sole purpose of mining tomorrow's anki reps and so on?

Consuming the content you want to consume most. That keeps you interested and gives you reason to power through. Mining should be a secondary concern overall, as the exposure and time spent actually reading/listening helps more than anything else.
So far only DQXI was voiced as far as games I've been playing go. Though I think FFVII onward are too, and I am on VI now, so I guess I'll be getting more of that soon. I would actually say, for games, playing ones where the text does not auto-advance most of the time is better. Voiced content makes it easier to understand some things if you cannot read them, but then you might also get complacent and forget to actually try reading the text or mining a word you know when spoken but cannot read.
If you can find written media you want to consume that has transcriptions, that would be easiest. These allow you to more easily grab the words for lookup and mining. I've not looked, but maybe there are resources for manga out there. LNs that aren't just image scans are good too.
For games there is a spreadsheet that has links to some transcripts that you can find in the pastebin in the OP. Not all of the transcripts it links to are great, but some have been massive time savers for me when they're properly laid out and actually have all the text.

I myself never really concerned myself too much with something being hard or easy, I just watched and played stuff that genuinely interests me as long as I was not completely lost, so I think mining should be a major concern, but it should always be secondary to both your enjoyment and your learning. At your current level you will find so many words to mine that you will have your quota for the next day filled very very quickly. I still have a backlog of about 3500 words (of varying quality, some of them I already picked up naturally, some are too obscure, some I never got around to learn yet) in my mining deck so I could technically go months without mining if I got busy or lazy. You will get to a point where it is very unlikely to run out of words ever again.
Just find a game that interests you that doesn't auto-advance text and give it a try. It doesn't HAVE to be voiced, but I considered it a clear advantage. I don't think you will run into any danger of over-relying or using the voice as a crutch, for me it's the exact opposite and I find words to be much more memorable if you have an associated voice clip (or memory) with context. As for voiced games, any of the newer Persona games would be a decent example. They're not fully voiced, but have a lot of voiced scenes, a VN-style backlog where you can replay (and thus easily record) the voiced audio and they have a mundane setting with a lot of everyday type language and cultural context that is both useful to know and something you will encounter a lot.
The spreadsheet anon mentioned is very useful, and for games that aren't available there, I would also look into setting up a decent OCR tool (or Textractor for games that you can get it to work with, always worth trying), it can save you a lot of time in looking stuff up.

Definitely also try watching subtitled anime as well if it interests you, it's more listening than reading but it also helps reinforce and it's a lot easier to mine cards in than game (it's basically fully automated, whereas in games you have to paste screenshots/text/audio manually). You don't have to drop the manga either - it's good to mix it up and get a variety of input from different sources, it will train different skills.
