Think of Vshojo as a more of a brand building thing going, and Mythic is a sponsorship operation.
A smaller streamer has to weigh the option of Building a bigger brand with Vshojo and then joining Mythic or make money with Mythic and then join Vshojo.

As for why VShojo vs. Mythic, it's because she has a friend in high places in VShojo and would just be another face in the crowd in Mythic. Not to mention that Mythic doesn't cater that well to Japanese talents. That, and VShojo (however nominally) is a brand with some name power to it, so it's something that she has experience with and can make work.
If anyone's actually seriously asking why not Holo, the answer is even easier - Cover is not hiring. Pikamee doesn't have the clout to force Cover to start a gen 7, so that isn't an option in the first place. Niji's also not exactly in a good place right now, so she decided to bet with VShojo.
