Actually it's not just learning how to block, but when to block.

A new player will usually not know when to execute abare - they might just mash wantonly on wake up or during blockstun and get meatied or frametrapped respectively.
A player with a little more experience will usually recognize these scenarios and know they need to block on wakeup against the meaty or keep blocking during pressure strings to not eat the frametrap. This however opens them up to getting thrown on wakeup or letting the opponent run up and throw them or overhead them during pressure. These are things that will usually lose to someone mashing jabs however.
A higher level player will instead try to read the opponent and block if he predicts the opponent will go for the meaty or frametrap, and mash when predicting the opponent will try to throw on wakeup or run up in the middle of a pressure string.

But on a more serious note considering Coco has burst you must have done an Aki combo and some neutral so depending on your collab you should have it ready and can use it defensively without even having to burst (most likely you don't have it unless Coco got hits in).
And unless there is a considerable difference in your skill vs the opponent, it's unlikely Coco will win from 1 knockdown.
Also even if she uses her burst to get in, that means you get to have the second burst which means your turn against a Coco with no burst.

Feels like aside from her super-grab it's really easy to get swept in the ayame vortex once it gets going. Ayame doesn't have much in the way of real mixup though. She has stagger pressure, but it's a bit less useful since Coco's the only character with a frame 4 meterless option.
