You're try to collect sets of either 3 of a piece or small straights. If someone tosses a piece you have 2 of you can "pon" to switch it from the discard with a piece in your head. If someone tosses a piece that completes a straight you can do the same with a "chi", but it has to be from the person before you. You win when your hand consists entirely of sets + 1 pair and also completes a yaku.

generally you need 4 sets of 3 tiles, either sequence or triplet of the same tile and then 1 pair. however there are a few exceptions to this but youll learn them eventually.
All yakus make some sense.
all simples is only tiles between 2-8
dragons are always a yaku so you have a winning hand
winds correspond to the round (either east or south) and your seat (can be all 4 winds)
chanta and junchan are kind of the opposite of all simples, requiring you to have a 1 or 9 in all triplet/sequences and dragons/winds
riichi is just a closed hand
haitei/houtei/rinchan are just situational

It kind of depends on the deliveryperson. I work for UPS but I said "mailman" to not say "ups delivery guy" (it's too blogposty but you asked). When I first got on as a seasonal assistant the driver told me to just leave the package sometimes even if a signature was required (it did say in the orientation that it was up to the deliveryman's discretion), but I'd always ring the doorbell even when no signature was required. I am not so thorough anymore (it was beaten out of me also I deliver to an area with too many loud dogs and they really harsh my vibe).
