You're not completely wrong if you're talking about cover's 'idols' then yeah, they start out popular nowadays and have to maintain themselves, there's no journey for them. Most of them don't even try to get better at anything or try to produce more fun content at the very least. But homos are closer to actual idols since they start out much smaller and have a lot more room for growth and they do grow. Dunno about EN ones, they haven't been around much, but some of the JP ones have only been steadily growing in terms of skills (Oga and Rob have improved massively in terms of singing for example) and popularity. It may not be exactly like the real idols, but that shounen manga journey is close enough for me, I like it.
