The term cuckold comes from the cuckoo bird which is known for tricking other birds into raising its young by knocking their eggs out of the nest and replacing them with its own.
Cuckoldry, as a term, originally means to raise someone else's child. Anything past that (girlfriend cheating on you, watching your girl get fucked, etc) is a more modern expansion of the term.
So yeah, raising the child of a single mother is literally cuckoldry. In not necessarily saying it's a bad thing and I even think it can be sweet sometimes when the kids comes to see the new parent as their legitimate parent, but it doesn't change the meaning of the term.
