I'm a pretty big casual myself, my friends laughed at me for quitting DS1 right after the tutorial, and haven't played any other soulslike since.
I found Nobeta's Advanced difficulty to be perfect for me, just the right amount of challenge to be fun but not frustrating. You're meant to die a few times to bosses, it's part of the fun.
I might try to tell her on the stream, but I'm a lurker so I'd prefer if someone else did.
