I don't know, she also has these rare moments when she goes ultra instinct out of nowhere and just headpops hordes of enemies with a level of skill that seems way above her usual average. So I think she at least has the potential for more active close combat, but yeah those moments are rare for a reason - as most of the time she just overthinks things, gets overwhelmed and panicky and her skill just plummets (plus the usual streamer debuff of being distracted by chat and thinking she has to "overact" her panic and flail wildly for audience entertainment).

As for her being suited for more sneaky/stealthy gameplay, I don't know, I haven't seen enough of it to be convinced. I know she ATTEMPTS to be stealthy often in games, but that may be less because she is actually competent at pulling it off, and more just because she's a scaredy cat who's unsure of herself. And most of the time she fails at stealth anyway, enemies notice and swarm her and we're back to panic and wild flailing (with the rare ultra instinct moment)

Problem is, GTA "works" for her mostly because there's wacky shit happening every other minute and the characters have some great banter for her to play off of and keep her engaged.

Compared to that, Skyrim is a lot more "serious" high fantasy, and can be kind of a drag when you spend a lot of time just running around the open world not knowing what to do, and have less constant interactions with funny characters to lighten the mood, or have to do much more managing with the rpg systems etc.
I'm not saying she would totally hate it (maybe it scratches some of her LOTR itch), and by all means she should at least try it for one, but I wouldn't expect her to get into it as much as she's enjoying GTA right now.
