How do you write about a chuuba without watching their streams?
It's not intended to be inflammatory. I am a clipfag and really only consume only clips that end up in my recommended. It seems like I don't care enough about chuubas after all. Yet, I care enough to lurk in this thread for like half a year already, and I care enough to want to read/write fanfic with them.
The closest thing I can claim to know about chuubas is their easily google-able lore and some of the more popular clips. Is it enough so that most people don't get their suspension of disbelief broken?

It depends entirely on your keenness for storytelling and intuitive characterization. If you "get" the characterization they're meant to have, you don't need to pore through 100 hours of streams, since fanfic isn't going to be true to life regardless of your efforts.

It probably varies and depends from chuuba to chuuba and how much you can get away with usually depends on the story's subject matter. A filthy pile of smut? You'll probably have to take liberties with their personalities to begin with, so not being 100% accurate is something the reader should be prepared for.
A tragedy story about something very personal to her? Yeah you're going to want to spend some time researching how she actually acts, instead of her clippable moments, otherwise it's going to fall flat on its face.

Lore is only really useful for flavor, and none of the girls really do much to stay within lore outside of La+'s chuunisms, but that's just part of her charm.

Another aspect that hasn't been mentioned yet, standards vary a lot based on the individual chuuba. If you write about a famous chuuba that that many here watch and your favourite 1view having sex, inconsistencies will be noticed with the former but not the latter. What's also largely not seen as inaccurate is writing based on popular rrats or memes about the chuuba (like Miko lusting after Pekora, Subaru being a duck, Botan liking Adidas, Coco and Kanata being a couple...).
In a way, there's different versions of the chuuba (rm, on-stream, community perception) and you can use a mix of those to create their personality for your fic. Of course there's no guarantee someone won't complain, but these sources are much better than just making something up for the sake of the plot.
