Lyrics rhyming help reduce something called "Tension"
Tension builds up when you put notes together, and needs to be resolved or it sounds weird.
Which is why most songs use 4 chord progressions
I.E a G, D, E, A back to G or something like that.
You'll hear the phrase "1, 2, 4, 5" in music, basically it's how the chords and notes progress and relieve the tension.

Lyrics do the same, the rhymes release the tension in the song.
I can't find good examples of this in actual songs but this one

You expect the Rhyme to be in the same verse, but it's actually the second line of the second verse where "coke" rhymes with "joke"
