I'd say the biggest mistake is removing scenes that establish Frodo as a intelligent and courageous adventurer (meeting with Gildor, being trappedn in the barrow, fighting off the Witch-king to the point that the Morgul-blade misses Frodo's heart and the Witch-king is later wary of attacking again). Movie Frodo comes off weaker and less admirable.
