Contrary to what some people seem to think most streamers don't have the ability to constantly fake their behavior and still convince themselves they're performing well as an entertainer. Having seen spoilers they feel robbed of something that could have been good content. They could try to brazen it out, pretend like they didn't get spoiled and give a big reaction hoping they don't get found out, but at the back of their mind they'll always have the fear of losing viewers who 'saw through' it. Worse, it doesn't actually matter even if they hide chat because some people will not believe the streamer didn't read the stuff being constantly spammed in chat, so the mere existence of the spoilers being spammed makes any reaction or 'unspoilered experience', genuine or not, suspect, and likely degrades the viewer experience.
