I know that hololive claims they aren't an idol agency....but that's basically what they are. The girls are chosen for their talents and skills, and are expected to keep to idol standards. No lewd, not too much cursing,no associations with males.....etc. Nijisanji talents on the other hand are basically just streamers. They're chosen for their ability to put on an entertaining stream. and their ability to make friends with the other talents.

Case in point, most of the Hololive talents were singers, artists, or what have you. While nearly all of the Nijisanji talents were streamers. In fact all of them.

I think using a different term like "liver" to describe the nijisanji talents is appropriate.

Combine with the fact that Nijisanji was the only vtuber agency that used Live2D instead of 3D, you can get the reason they called themselves "liver" in order to distinguish from the rest of chuubas.

It comes from the cannibal culture in japan. The first type of livestream was cooking shows made by ainu in southern tokyo in 1852. The term liver quickly became an affectionate term for the presenters. In ainu culture, livers were believed to be where the umami was created. Umami is the taste of savoriness, I won't explain exactly what it is, you can check wikipedia for that. The presenters were given the name Keen-tama which in ainu means liver like the organ. At the time the word was either left untranslated or translated in japanese. The term liver became a bit more popular during the 1930s before becoming defacto ban during world war 2, as most indo-european loanwords were. Due to mistreatment of the ainu people by the empire of japan, their culture and language was made illegal and became taboo. After the end of world war 2 and the surrender of the japanese empire, loanwords exploded in popularity, the term "liver" became the norm and as ainu culture and language was severely damaged from the mistreatments mentioned before. They sadly never fully recovered. The empire destroyed most videotapes, dvds and blurays of those cooking shows during world war 2. As livestream started becoming popular again and became affordable for the masses, the term liver for stream presenter came back in use. And that's the short history of the term "liver".
