Personally, I really don't like using summons because it makes the bosses feel less satisfying to beat. But holy shit Elden Ring has a lot of shitty filler bosses. I play melee only, use the heaviest armor I can without fatrolling and I swing two huge-ass greatswords. I do this not because I think it's the "best" or "right" way to play, but merely because my caveman brain doesn't like having two many options so "roll, heal, or unga-bunga with swords" are the only choices I want in a fight. I think if players want to invest runes into levelling FP to use summons and more runes into upgrading them, then that's an investment in their build that is valid, in the same way my strategy is. All Holos who beat the bosses deserve praise. There are no half victories. If you beat the boss you win.

My biggest issue with Elden Ring is that it has no sense of restraint. Every boss is a huge, shonen anime combofest with multiple phases. DS1 almost kind of does what I mentioned with a pseudo "route select" that you can interchange anytime you want pretty much but it's still fairly different from DeS and Bloodborne

Just position yourself so, that you can see him approaching by the footsteps on the water. It somewhat falls apart cause sometimes he does the dash/teleports behind you, nothing personnel kid move when he is close and then you'll be swinging air. I found the best way to deal with him is just dash-punch him when you see where he is coming from. Even if you dont hit him he'll miss his grab.

I honestly didn't find it too bad. I made sure to empty out my Runes so dying was okay, and then I equipped a bunch of immunity boosting charms. Walked the whole perimeter to the left while chugging flasks, died, and then repeated for the right.
