Because nobody has the time to watch/be a fan of everything, they need some reason to excuse themselves above all else as to why they're not choosing another option of a similar thing. In this case, because NijiEN is clearly full of people who think they're now too cool for Hololive yet they need to constantly tell themselves, condition themselves, as to why they "left" Holo and can't just watch both if they want. The cost here being simply time at minimum makes it a pretty fucking petty thing to get pent up over.

Another reason would be ideological - some people see Niji as like the anti-Hololive and try to embody it as such including I think many of the talents themselves. However, this isn't fucking true at all in the legit sense because NijiJP operates on a wide spectrum and many of their biggest talents like Lulu are actually not that fucking different at all from how most Hololives run, and to take their most sleazy examples and say the whole company is like that is like taking Coco and saying all of Hololive is like that when it's just not true. Of course, this fact is utterly fucking lost on most Niji fans because they objectively knew almost nothing about it at all until NijiEN existed. But oh well.

Nijitalents engage in tribalism. Nijifans openly stand by the tribalism their own talents push out. Many fans probably feel vindicated while simultaneously trying to say talents aren't actually shit talking.

On the other hand, Holofans may also see their own tribalism vindicated in a way. Knowing talents engage in bants and shitposting (even if it might be a smaller degree), Holofans will post their tribalistic takes. Keeping this flame going. It is what it is I guess.

Tribalism is an inherent part of human nature. Hell, it's a large part of how and why we evolved to the species we are today. It's not something unique to VTubers, or nerd culture as a whole. It's seen in every aspect of human society.
Think about how many people get super serious about the sportsball team that happened to exist in the state they grew up in. They have nothing to do with that team, they have no say in how it operates, yet they still consider it a part of them.
Humans have a primal need for the thing that they like or are a part of, whether that be state, race, profession, hobby, or interest, to be proven to be "better" or more "worthy" than other things, especially in the same categories. Even if it's pointless, even if they have no power to actually affect it. Regardless we'll engage in tribalism because we're hard-wired to do so, because we want to believe that somehow the group we belong to or worship is better than the equivalent in the "others" camp.

A person who's incredibly attached to the second place in popularity for a certain thing and is incredibly obnoxious about it. Mostly seen in threads about the "first place" thing discrediting it and trying to make their favorite thing seem better rather than discussing the stuff they like in their own threads.
