To be fair, Estoc has NO fucking stagger potential it is trash. I played the early game as both a Confessor and Prisoner and I was not expecting such a different in basic difficulty. She should get Carian Slicer sorcery to replace her Estoc.

Go get a +3 upgrade (you can get one just by going to a mine and a statue in limgrave, 5minute kind of job) and try using the Square Off strong attack to stagger, usually 3~5 to break stance, you can also try parrying the horizontal sweeps, you can use the jellyfish to bait the attacks and just spam square off.
