Anon, it's a more basic concept. The idea of not knowing who is behind the avatar is always a plus. This isn't unique to vtubers, if a content creator has a great voice for example, you can imagine him in a way that you think fits that voice which helps viewers to have the best version of the content creator in their head.

Tamaki is not a good example as the idea anon is questioning here is someone showing their face and still referring to themselves as said tuber. For Tamaki, there is a clear distinction between the character Inuyama Tamaki and Tsukudani Norio, even with other vtubers like Desuwa they have a seiyuu listed, however it's still a separate entity as the vtuber is a character. Western approach to vtubing is different than in japan, western approach embraces the avatar and the real identity, they don't really get into the same problems for being celebrities / super stars, their privacy is mostly safe and this is because most of them started as minor e-celebs / anisingers / cosplayers, etc and are just jumping into the trend.
Just take a look as AmaLee or the soon to debut Hane Ame vtuber, respectively a singer and cosplayer, people know their identities already you'd think that getting a model wouldn't matter but you'd be wrong as the current trend and the most attention goes towards being an "anime girl", fulfilling a fantasy. This goes along with the western culture of taking "pride" in being a simp for these women.
For western chuubas is more important not to get cancelled for wrong think in past tweets than revealing their irl identity and breaking the immersion.

The same thing can't be easily applied in Japan, not that is impossible as shown by K-son, but the culture and memetic perception is basically different, and the chuubas don't usually show their faces mostly to protect their irl identity and privacy, and / or due to NDAs issued by their respective companies. Said companies see more value in keeping as much as they can the kayfabe / suspension of disbelief to deliver a fantasy to the general public. You can see the measure is necessary when you have a Pekora or Gura that if they were victim of cancel culture / doxxing could risk non only the company's income and image but potentially harm the person, be it psychologicaly, emotionally or even physically if a deranged "fan" could get a hold of that information.

Irrelevant as vtubers often break characterization to tell stories about themselves or their past in a non specific ways, Seiyuu's / VAs also bring characters to life and keep their irl personas. Japan is just better at keeping the suspension of disbelief because they see more value in it, the main point of attraction in vtubers is having the fantasy of an anime character irl interacting with you. Most western chuubas don't get this and value more personal recognition / fame / clout since they don't have anything to hide from the get go and many are just jumping to the trend to keep relevancy or gain a new audience.

I don't think that vtubing is indistinguishable from idol culture, nor do all popular vtubers follow these rules, but I do think that they're much closer than a vocal minority of Western "fans" want to admit.
