Any recommendations for vtubers that finish games? It annoys me that a lot of the bigger ones just play games for one or two streams only to return to minecraft, apex, some advertisement game or flavor of the week.

Well there is twitch.tv/stalkeralker who has spent like 30 streams in a row on Xenogears. She did the same with Celeste before as I remember, only really broken up by the occasionally karaoke. She is a bit of an extreme example though as she really just streams what she wants whenever she feels like it and does not do anything more than what she wants to do.
I'm sure >we have some more orthodox chuubas who like to finish games so someone else can chime in if they know any

Her friend Nina Saotome does similar, she usually finishes all of the games she plays unless she gets distracted or literally can't play the game (ie. Visage, too scared) so you get a stream a week of that game series until completion.

He's usually 50/50 on his two staple games (Minecraft, TF2), but he usually spends the other two streams of the week on the game he's currently playing. Sometimes he even becomes hellbent on beating a game and ends up turning it into endurance (i.e. 5 hours in one area of Demon's Souls, the latter half of Undertale True Pacifist, Branch D/E in Nier Replicant, etc)
