So when I was going to the gym it was consitently 3 times a week. Someone would suggest to go more but I sticked with it and it was fine for me. The main thing for me was calorie surplus, but not too much. So I did that calorie calculation and added like 200 kcal to that so that I hopefully gain weight but slowly. I had appetite cause I was going to the gym regularely, but for you if you can't eat much I suggest munching on the some sort of nuts through the day. They are very calorie dense so you can pump up calorie intake.
Now I don't go to the gym anymore and I can not eat that much, so I get you when you say you can't eat. Idk waht to do about that. You can't gain weight when you don't excersise, unless you wanna waight in terms of fat, but I assume you want muscles.

Since you're attending Uni I suppose you know how bussy you're going to be in the near future? I mean like a week ahead, not much more. So my plan would be this:
1. You know you can manage to exercise 3 times in the next week. You try eating baseline calorie amount + a lil bit more in that period.
2. You don't have time. For that period of time try to eat as close to the baseline calorie amount as possible.
I recommend weighing yourself at least once a week so you can track your progress.
Also make a plan in advance of exercises and numbers of reps/sets you're gonna do in the gym or wherever. It will save you so much time in the gym. You can google 3 day full body workouts and find some that you think is okay for you and than modify it furthermore to better suit your needs/ equipment you have available.
Do you track ratio of carbs/fat/protein intake or is it just calories in general?
