my guess is that it's either a small scale food poisoning, and therefore it's about dosage, or there is a process which determines whether it turns good or bad. any process that can be learned can theoretically be replicated, but maybe it was more difficult than what previous humans were capable of doing. i wonder if different meats from different animals would have different value in terms of fermentability. also, this is a bit of a tangent, but are there any known ways of dealing with pryons in the nervous system? i know there are no known cures yet.
