Completely different technology:
Niji uses a fuck ton of expensive optical trackers.
Holo uses physical trackers that they stick on chubas and on objects they want to track. If I remember correctly, they used HTC trackers. Some anons said that they started using different physical trackers, but I never seen any solid proof of those claims.
Also, Niji has better software for physics and facial expressions.
Talking about models, in terms of pure quality - nijisanji is much better, but in terms of esthetics - that's completely subjective, because some people would prefer more anime-like, other people - more realistic.
