I'm not going to sugarcoat it, you are going to have to spend at least 6-10 months of daily studying before you feel like you can follow along conversations and read decently, and then years of studying if you truly want to master the language.
Anyone telling you they understand x% of a stream from like a month of studying is talking shit and are heavily deluding themselves into thinking they understand what they are saying and are most likely only relying on the context rather than what they are actually saying.

And age is just an excuse, I don't know how old you are but I'm late 20's and have studied for several months now and seen remarkable progress. It all comes down to you making it a habit.

Basically if you can set something to Japanese and still feel like you can use the program/movie/anime/game properly then do so because all exposure to the language is good exposure. This is obviously an intermediate step and not a beginner one, but your goal is to immerse yourself in as much of the language as you can handle to burn that shit into your memory.
For now you shouldn't think about this sort of stuff and should focus only on Hiragana/Katakana until you know that, then you can start branching out into Kanji.

I'm saying these things because these are things you are going to have to do eventually, and there is no point tricking you that you don't.

But we're talking about listening. Sure I can't write the kanjis myself but it doesn't mean I can't understand the word. Like I said earlier after hearing something a lot of times you're just going to remember it. E.g. たべる、 いく、 あさい、 かね。。 Yes that's baby-tier but if you know taberu and know how to conjugate it you can try to translate it to other verbs you hear, then you "learn" that some don't conjugate the same way, then you "learn" about how adjectives work etc.

Well, I might also add a point here. I used to practice with a private tutor for around a year, then focused on learning all JLPT kanjis (and I regret about it). Then, finally, discovered Hololive somewhere this summer and my listening skills finally started to get better.
Currently believing that I would get to this same point much faster if I were to just watch Pekora and make attempts to translate/understand the full meaning of spoken sentences in archives, using SRS for new words and grammar. But maybe it requires some base knowledge to pull this off.

Speaking from my own experience I can understand enough of her zatsudans to write summaries about them although that requires me to re-listen to parts several times over as well as being very focused, and I'm about 9 months into my studying.
For a quick and dirty live zatsudan I can catch the topics and sometimes the details but not at all on a smooth level, and depending on how shit a day it is I might just not understand some at all.
I'd wager something like a year and a half, maybe even two years is needed to be able to smoothly understand a zatsudan as it goes along and probably even then you'd need to revise some rare sections.
I'm roughly 3600 words in and it isn't enough as I come across words I haven't heard or read frequently, although there are more and more conversations and messages I come across where I don't need to check up a kanji.

That happens to me a lot as well when doing summaries which is a pretty scary thought, because sometimes the thing I thought I heard was an entirely different meaning to what it actually was that I finally understood on the xth re-listen.
It really helps to be thorough if you are going to try to understand because it is very easy to jump the gun when you are still learning. And of course it is really frustrating to be sure about something and end up being told you were actually wrong about it, but as long as you can convert that frustration to motivation rather than hurt pride then it is all good.
