Every time I try, the whole thing just flies over my head. Like, making pairs, triplets and sequences? I get that. That makes sense. But then you start saying that, to win, I need [japanese word], and to get [japanese word], I need [japanese word], [japanese word], [japanese word] or [japanese word], and you just lose me completely. You call Pon if you want to complete a triplet
You call Chi if you want to complete a sequence ONLY from the guy in your left
You KAAAN if you are a mad hatter
You RIICHI like you'd play UNO and try to win
You RON if you win from another's tile
You Tsumo if you win from a tile you draw
If 6 foreign words are too much for you maybe consider making toast in the bath

It's not that hard.
You need a pre-determined combination of tiles forming 3 triplets and a pair to be able to win (depending on certain conditions this may change) - those are called Yaku.
You If you don't have one, you can't win.
The most commons are:
-Concealed Hand (Riichi, i.e. 3 triplets and a pair, without having called your opponent's discards to complete a triplet).
-All-Simples (TanYao, which means nothing but tiles numbered 2 to 8, not extremity tiles, no winds, no dragons),
-Honor triplet (Yakuhai, having a dragon triplet, our a triplet either of the seat wind or round wind).
-All Triplets (Toitoi/Sanakou, Have all triplets, either calling/not calling)
-Seven Pairs (Chiitoitsu, self-explanotory, you need 7 pairs of any tiles, hand will be concealed).
-Full Sequence (Ittsu, have a sequence 1,2,3,4,5,6,7,8,9 regardless of suite, bonus if they're the same).
I made yout of Novice on MajSoul only knowing Riichi, TanYao and Yakuhai.

If you discard a tile and you need one of the same tile later to declare a win, you can only win by drawing that tile instead of calling one of your opponent's discards. That's called Furiten. So beware of your discards.

The rest you get by playing and studying the game as you go.

A concealed hand isn't a Yaku on its own. You need to declare Riichi, lock in your hand and play the gacha. Menzen Tsumo is also possible if you take no discards, including your winning tile.

For Ittsu your straight needs to be single suit, no restrictions on what your final meld is.

Honestly, the best approach is to make an account on Mahjong Soul, go through the tutorial and read the instructions and it should give you the basics of how to play. Most of the youtube videos are overly long & focus on stuff you don't need to know about for an online client.

As for memorizing yaku, you don't have to. I just remember which tiles are terminals, which are not, which tiles are which suit, and the principle that most yaku are composed of either ALL or NOTHING of X.
