What makes vTubers different from streamers who show their real faces on stream? and why does it feel like vTubers are more sincere, is it because of the mask/avatar their wearing? i've seen people change in personality when wearing something that covers their faces or hides their identity.

Redditors are still joking about how Yagoo wanted an "idol agency similar to AKB48", the reason being that it's exactly their unidol-like behavior is what makes them so popular today (barring an unconcealed partner to maintain the GFE).
People always cite Miko's nigger, Fubuki's shitposts, and Coco's swearing on Asacoco as some of the initial hooks into the fanbase. Without the shield of anonymity, it would be harder for very shy girls like Pekora and Aqua to express themselves authentically, making the avatar an inextricable part of the v-tubing experience.

It's a level playing field where personality takes precedent. An attractive Avatar is one of the easiest components to acquire; thus it's up to the streamer to be genuinely entertaining. Mainly this. When you watch a regular streamer, you're watching a person, but when you're watching a vtuber, you're watching a personality. If they didn't have the vtuber mask, believe me that everyone would think that their act is embarrassing or cringeworthy but instead they give us the illusion of watching someone outside of this realm of reality which somehow not only makes it acceptable but even endearing, and allows them to play an entirely different character from who they truly are behind the screen. Pekora's pekos, Korone's high pitched laughs, Subaru's shubas, all of those things would be seen as childish if they were streaming as their real selves but since we're pretty much watching not a person, but a character, it gives you the feeling of watching something akin to a real time anime. Also, is a return to the true anonymity that the internet had lost because of social media encouraging people to share their entire lives online, and just like how in here we're all Anonymous who can behave however we want, so can they open themselves to new opportunities that couldn't be possible if they were showing their faces. Pekora for example wouldn't even be how we know her because is known for a fact that's she's quite shy off-screen.

Consider Pokimane, the biggest Twitchwhore who wanted some of that vtuber money but instead of becoming more popular when she began streaming with a 3D model, she got highly criticized because that stunt allowed people to see how truly vapid she is when she's now showing her tits on stream.

luna was already using nanora in her early nico era. basically many holo jp members are ex-nico streamers who were already half-anime characters. theres a history like that in japan.

almost all japanese vtubers have anime voice. most western vtubers dont really have it or act like an anime character very poorly. so i mean at least you cant lump the japanese and the westerners into one.

A streamer that shows their real face slowly gathers popularity through their collaborations, their commenting, maybe a few clips here and there.
A vtuber can gather a lot of popularity by just simply posting their design.
And even if their personality is nothing "outstanding" (for the lack of a better word), people will still watch the streams because of the cute design and interesting results the face tracking can get when they react to certain stuff.
I wouldn't watch any Japanese streamer because I don't fucking understand the language, yet I watch Japanese chubas because their random noises and character design really get me hooked.
