Demon's Souls is the easiest of the bunch but Dark Souls 1 is just a better version of Demon's Souls. So you can start at either of those if you want.

I played first sekiro then got in love with the genre and played dark souls 1,2 and 3, i didn't play bloodborne or demon souls because i don't have a playstation. But i recommend playing dark souls 1,2 and 3 first since it's older and can be tough starting by elden ring then going back to a more slower gameplay also worse graphics. All fromsoftware games are peak gaming for me

DS2 isn't great and Demon's Souls didn't age that well, even with the remake. Other than that order doesn't really matter. Elden Ring is the easiest and the most polished. Sekiro is the most different since it's mainly parry based. Bloodborne has the best atmosphere, though the performance is ass. DS3 has the best bosses. DS1 is obviously iconic and the first half is fantastic. If you're worried about difficulty go with ER or DS1, otherwise pick whatever looks fun.
