I saw someone complain on the thread that they got yelled at for not reading their chats on stream, here is my advice to that anon:
First make your boundaries clear and do not get talked down, you are the streamer and an entertainer not their therapist or their slave
Second no matter who they are: cut the ties and leave them at the status of a viewer, I had the same issue with a close internet friend and I can tell you that he is barely a friend now. If its a viewer, a friend, a close friend, a partner or even a mod, except in emergencies they shouldn't try to control what you do or don't do.
And those people aren't here to enjoy you as a content creator but are here for your attention, and if they go as far as telling you did something they didn't like in your dms, something as pathetic as not reading their chats it means you have a close contact with them, even if they are your only chatters, those are attention deprived people and they will try to get more from you, if there are other people in the chat they will use the incident you just had to make you feel guilty and only pay attention to them.
Really, cutting those people would be better for your mental health, your streaming career and everything with it. Been there done that.

For volume you want your mic to usually be in the yellow in the obs audio levels though, and it's okay if it peaks into red when you're louder.

Links to Twitch VODs expire after a certain amount of time unless they're made into highlights, so the /asp/ies probably sent you those and that's why you saw them as deleted.
Anyway, I won't critique, but I think you marked the video as a "video made for kids" because comments are turned off and YT is telling me to try YT Kids (this was the biggest clue).
If you wanna make quick n' easy subs for clips you should check out (a pirated) Adobe Premiere's auto transcribe feature, or CapCut's for the same feature. You can crank the video out with subs in minutes.
