Traditionally, tournaments and events like this end up with watching someone focus intensely on giving their effort to win. The result is that many fighting game streams tend to revolve around this style of quieter, intense gaming sessions. This is not a bad thing per se but not everyone wants to watch this.

It's easier, at the end of the day, to garner interest by simply having a good time. When a group of bros are having fun, it's natural for people to go "oh what are they doing there? Sounds fun" and take a look. While every other POV was mostly chill with a fair amount of intense gameplay whilst deafened on Discord, Doki's team went for full couchbros. Everyone's mic was on and they were all having a good time together.

A lot of female vtubers tend to fall back on cute girl doing cute thing in some way as a part of their persona, or even as a part of their personality. Outside of that, they still retract to being a girl in many situations. But Doki is a total bro, even more so than most male chuubas, and it works in her favor in situations like these. Doki full sends the bro behavior where most females wouldn't even dare. I honestly have yet to find any other chuuba that can replicate her energy to be honest.

Niji being good has been my wish for years now but the problems with their management and fanbase have been present since basically day one which is a shame because they have/had some genuinely good talents on their roster. In an ideal world they would bring balance to the vtubing industry, acting as a counterweight to hololive and leaning more towards what made livestreaming so popular. By not going full speed ahead into the idol stuff and having no gender segregation niji has far more mainstream appeal than hololive and could've snagged a much larger normie audience but they fumbled an easy win so fucking hard it's comical.

Crippling lack of self confidence offstream and a desperate need to "be useful" to others is my armchair analysis. Everything she ever does revolves around raising other people around her. In this tournament, she knew she wouldn't perform well so she focused on improving for their sake, and cheering them on if she failed. In her FPS games, she mains support and focuses harder on keeping her team stable and alive rather than selfish kills. In Niji, nearly every project she ever did focused entirely on either celebrating her coworkers, or celebrating her fans. Even things that SHOULD have been selfish or self-serving like birthday stuff always had the other girls or boys hidden away somewhere in the margins, if not front and center, overshadowing her on her own art.

I'm convinced at this point that Nijisanji's primary targets for recruits aren't necessarily good streamers, but people with terrible self confidence or egos so that they can mold them like a cult. Seems to be a serious trend with every member I've seen.
