I think at Lorelei latitudes, "winter" is more like the drier season, so I would imagine they do their best to conserve water.

During the drier seasons rock palms don't produce coconuts. Same with fruit trees in the orchard. And the aquaducts of the caldera run dry. Dodos would have to source another food for mousture. The wettest food Dodos remember having is shelfish in the rocky tidepools. Which begins their long treck to the other side of the island, and risk dangers of being hunted by sea hawks, feral dogs, sea bears, and sometimes rock turtles. The real risk of danger is heat stroke and dehydration.

And as cute as it is to give dodos a drink, you too have very limited drinking water during the dry season. Giving dodos food and water during this time is just putting yourself at risk. And while there are water wells dug out around the library the high elevation and rocky soil means you have to dig close to hard bedrock to find water. Dry season is when you bring out the stout wines and grog. Water water everywhere and not a drop to drink. Perhaps we can spec-bio some mushrooms that store water but is toxic to eat raw.

Dodos have a hard life...
Since the island doesn't benefit from usual rainless freshwater sources like rivers from alpine regions, large freshwater lakes, water-soaking soil and vegetation, there are probably some lifeforms that specializes in storing water outside of the monsoon season. Maybe there are some fat-leaved shrubs similar to aloe plants.
