She'll definitely be able to finish the main story at least, and I'm very looking forward to that. After the main story I can see her trying out some of the B sides and giving them a try, kind of like how she spent a stream or two after beating some Mario games just collecting more Moons/Stars/Shines.
Core will probably be brutal and I haven't even touched Farewell yet but I can imagine it'd be even harder. I don't think she'll do any more than this.

Last night was so much fun. Ame is absolutely wonderful.

Farewell is essentially a hard version of core (without the rising lava and ice) centered around navigating narrow ice pathways using gliding jellyfish you can throw and hold on to. The first half is doable if you are willing to put in the work, but the second half has a bit in the middle where it teaches you how to wavedash, which is where it gets really hard (i'm stuck on that half currently).

The main issue I have with Moon is its like the worst parts of Meatboy, where levels are just fuck you do it perfect, where one mistake = death. The fun parts of Celeste are the ability to choose you own path/solution to puzzles so Moon is the antithesis of that where the creator just had an opportunity to be a bully when the community kept saying to make it harder. The finale of Moon is one fucking long level where there are no checkpoints or screen crosses so if you fuck up you do it all over again. Though there is the one player choice there of doing the finale of Moon entirely backwards to get the secret alien berry.

I don't think Ame will do moon, but I have hope for hearts and B-sides.

I only see a few situations where Ame does Moon.

1. Ame gets really into the game and keeps stretching it out to do "one more stream" over and over until she just decides to finish it

2. Ame plays it off stream for the rest of secret berries and/or hearts and comes back with it wanting to complete it

3. Chat instructs her how to get hearts when she asks and Ame's stubbornness or chats requests get her to complete the B-Sides (maybe in some special stream) and she decides to do endurance special streams for final levels

4. Ame is stubborn and likes the game

5. Celeste full completion endurance streams as a chat reward

The best result I can see getting out of these Celeste streams is Ame doing the B-sides and Hearts for a few streams, ending with Core, then taking a break from the game for a while, and finally coming back with endurance charity stream of Moon.
