On twitch, the Japanese audiance watches fleshtubers like jun-faggot, shakha-chad and dharuma.
The only vtubers that audiance watches are the once that are adjacent to these fleshtubers or "part of the overall jp streaming box".

While on YouTube as a female vtuber you are kinda suffocating because there are already a lot of low/mid level female agency/indie vtubers saturating the market, but more importantly Hololive exists whose mere presence crushes every other vtuber on the platform.
Overall it's still better to try your luck on YouTube because the audience there, although already taken by others is still likely to click on your content, also vods exist so even if you aren't streaming for 12 hrs a day you might get some interested people.

Jp streaming is a lot more connected then them, that is the reason why they can have some server running at most of the times the FPS audiance also spawns from this box.
Overall I'd say that there are 3 major "boxes" in jp sphear.
The overall jp streaming box
Nijisanji (kinda stretch because the top nijis are heavily involved in the overall jp box) .
And the highly nuclear holobox.

The overall jp box is the reason why VSPO and Hal were able to rise in the vtuber hirarchy, hal along with kuzuha and kanae connects the vtuber side of things to the fleshtubers.
They also want to integrate holobox into this but the top holos don't give a shit about it so it's preety much impossible.
A lot of the jp severs have strict rules and hoops specifically to please agencies (especially cover) so they allow the vtubers to participate in the events, but in holo only 5 or so are ever interested so I don't think these audiance will ever mix.

Twitch overall early on used to be tightly connected too. YouTube is one of the few social media platforms where anyone can make it big by making a viral video. You also must have a huge flow of viewers for every video and stream, otherwise you're only going to get paid cents.
Otherwise, Twitch pays better. If you're indie or smaller corpo streamer, you'll have bigger paycheck and you'll have more control.

Technically Twitch doesn't allow you to play copyrighted music, but they're too lazy to enforce it and music companies aren't sending their fleet of robots to detect copyright theft like they are on YouTube. They might though if Twitch becomes more mainstream. Some streamers tried streaming copyrighted anime and movies, and it only stopped because mainstream media took notice.
