From what I understood Cover signed a deal with them that allows Cover to use UMG's resources to release things, but individual talents don't have deals so there isn't any problems if a talent quits or something since the deal is with Cover and not the talent. Mori on the other hand is directly signed and I'm guessing Cover takes some sort of licensing fee or some cut of profits and Mori cannot quit until the contract is up, but gets access to many more resources than any individual holomem gets through their partnership.

Holo-N is a "label" formed in partnership between Hololive and Universal Music Japan. As far as we know, none of the members are under the label (other than Blue Journey, although they are listed under EMI Records on the UMJ site). Holo and UMJ pick and choose what songs/releases get released under that label.
