It's partly different cultural norms and expectations, I reckon - heavy trope use and out-there plots aren't inherently bad, and a conservative society encourages the former while also fueling a need for escapism that encourages the latter. But from my limited experience it's also that Japanese nerds just don't engage with (domestic or foreign) literature as much as western nerds do. Light novels are mostly more comparable to stuff like Twilight and Fifty Shades of Grey (which incidentally were bad fanfiction); Manga can be very good, but is bad to draw inspiration from if you're trying to be a writer rather than a mangaka.

Not him and a bit off-topic, but yeah. The quality of plots in anime and manga have really taken a nose-dive since the 2010s (and maybe even before that). I think it's mainly because the content is now made by otaku for other otaku, rather than something made that's meant to appeal to an either wider or more mature audience. You may notice that during the 1980s (before the economic bubble burst), a lot of shows were made with stories that appeal to a mass audience like Doraemon for example. Then, during the 1990s, you've got stuff that started to appeal more and more to otaku (with some stories that went against the grain like Eva - a show that, ironically, just made more otaku). By the 2000s and 2010s, pandering to otaku was already in full swing, since they were the ones willing to fork over the money.
I imagine that's also the case with JP fanfiction. The stuff is made that way because that's what their audience wants from them, and they themselves are part of that audience. It's kind of sad if you think about it.

It's really sad. A lot of things could've been more than what they currently are, if only content creators didn't have to pander to a specific audience where most of the money comes from and/or they are part of that very audience. Of course, there are exceptions in anime/manga (especially these days), but Sturgeon's Law is just too strong. It depends on how particular the conventions are.
Like you can go pretty fucking granular and still wind up with two totally different plots and themes. Take SAO and boil it down a bit, for example. All you’re looking at is the concept of real people getting stuck in a virtual game world where if they die, they die in the real world too. That’s a really specific set of criteria, but there’s still an insane amount of room to innovate, make different choices, and set up different overarching narrative themes.

However if the level of granularity ends up being that it’s the exact same narrative premise, plot beats, and is basically just the same thing as another work that uses the idea with a few names swapped, then you’ve got an issue.

Hell, even 50 Shades was able to take its knockoff setting and work it into something that only vaguely connects to the world it was based on. As trashy as it is, it still passes the litmus test for originality.
