Coco & Sana chose to graduate, cordially gave their notice & left on good terms. Every other instance (Rushia, Aloe, Chris, all of CN) made Cover look bad in one way or another, so it's not to their benefit to remind people they existed.
Think of it from the perspective of the marketing suits; if a new fan checks Hololive's roster on their site and sees the "alumni" section, they'll be curious as to what happened to those talents and want to look it up. It just spreads awareness of controversies they'd rather people forget.
Aloe's arguably the most awkward example, since she's basically blameless. But the fact that Cover wasn't equipped to protect her from the harassment that drove her to quit is a bad look for them, and she hadn't had a chance to establish herself yet & build a bunch of fond memories. So into the memory hole she went.
