Studying grammar, vocab, kanji, hiragana+katakana, etc. are necessary to give you a foundation, just make sure you're actually listening to and reading Japanese for more time than you are stuck in your anki decks, grammar resources, writing practice, etc.
I know a lot of people use the 80/20 rule for active/passive immersion respectively(so spend 80% of your time immersing trying to actually understand what's being said/what you're reading, and the other 20% just listening to Japanese as background noise).
The most important thing when actively immersing is that you find media that is mostly understandable, yes-- mostly. You are going to have to become okay with not understand everything, and that's fine. That's the same way you learnt English or whatever your first language was.
Picking easily understandable media is a lot of the reason why people recommend CGDCT and children's anime and media, because you're likely to be exposed to more vocab and kanji used commonly in daily life and conversations, instead of something like VNs or vidya which is usually chock-full of terminology that is usually game or genre-specific.
Just a reminder that the "2000+ hours to reach fluency" is for fluency, you will be able to start understanding Japanese the more you engage with it. Good luck.

They're good, but I think a big part of that is less the model and rigging itself, and more how they use it. I feel a lot of Holos who've been around a while have fallen into mostly just sitting still with a neutral expression while they stream; but they're constantly moving, making very exaggerated expressions and emoting in various ways.

My reasoning for being against mmos is a little different, I've played wow since 2006 and i quit about 5 years ago but the way I see it is a chuuba being in an MMO sort of alienates their viewers (the ones who don't play) and like you said does restrict chat interaction.
