That shit just doesn't sell. There are crocodiles and dinosaurs and mechas, but they're all irrelevant today. 2017-2018 was the best time to debut an unconventional vtuber design, but only a very select few found success with them.

No shit they'll use anime avatars. Personally i think it's a shame, I'd love more wacky, non-human vtuber models but apparently those never get popular unless there's a girl behind it(simp money)

Facial expressiveness is important for all streamers including vtubers. They're ability to emote clearly and not have their face obscured is a must.

Every other answer is wrong. The real answer is that drawing a vtuber character in a way that can be rigged with live 2D is already hard, let alone some complex mecha or kaiju design. And the more complex and unconventional design makes actually rigging it well even more difficult. All this difficulty inflates the cost to be financially unviable considering the increased risk such a design would entail.

The real reason is because it's not worth it. You can't get popular with a mecha or a kaiju design. It's a complete waste of money and time, which is why nobody does it anymore.
