One nice thing is that Pika is keeping 4K+ viewers in every stream, with a lot of people engaged and having fun. Also, she is much less nervous and more relaxed compared to the first stream after the announcement. It is a pity that we will lose her soon, but at least we are creating good memories.

MKV is ideal, but it doesn't really matter as long as you remux them, not convert them. The video and audio streams in the .webm container can be muxed into either MP4 or MKV without affecting their quality whatsoever. However there are many processes that would re-encode the video and audio streams which would degrade their quality for little if any gain. I would do it all with mkvtoolnix personally.
