Multiple reasons
They want to experience the game and viewers to experience their gameplay and reactions.
With viewers grabbing the wheel the experience is no longer their own.
Secondly it's a matter of pride and not wanting unsolicited advice from strangers.
Third and probably most important, the average vtuber fan is apocalyptically fucking retarded and most likely giving wrong instructions.

It's not even about getting the vtuber's 'love'. It's just about getting a reaction that means 'I did something! Me!', like clicking the cookie and getting a +1 popup. That the reaction is in front of thousands of people makes the endorphin hit huge, why is why backseating will continue until the end of time.
It's why people endlessly request all vtubers to sing the most popular songs associated with them, that they've already sung a dozen times, even though they have access to ten near-identical clips of them singing the song. They don't really want to hear the song, they want to feel like they're involved in creating a moment that will be remembered. Literally 'say the line'.
