Inugami Korone from Hololive is an official ambassador for the Japanese branch of the Sonic franchise. She doesn't primarily play Sonic games though. She mostly plays a lot of old school games (which just happens to include Sonic)

Magni Dezmond of Holostars EN is a big Sonic fan of the games, and is obviously someone who's in the know of the degenerate side of the community. He wants to be an official ambassador but will most likely never be one because of the way he looks at Amy.

Ike Eveland from Nijisanji EN is an Adventure-era Sonic fan. I don't watch him that much, but he's pretty knowledgeable about the the extensive universe of the Sonic universe. (The comics, the cartoons, etc.)

None of the people I mentioned currently has Sonic games on their schedule. Magni still wants to finish Sonic Frontiers, but when that happens is up to him.
If you want a vTuber who primarily plays Sonic, then you'll have to look harder. I'm sure there are some indies who do exactly just that.
